Mordor is the Heart of Darkness, Realm of Evil in Middle Earth. The modern version is Israel.
I've started adding mushrooms, celery, green onions and carrots to ramen soups, or skipping the ramen and adding miso and noodles. Good. Recently I simmered salmon with miso until the salmon fell apart. Also good.
