Sunsets and sunrises are a typical subject for photography. You are absolutely right. Whenever I capture those moments, I am always reminded of two ancient Japanese concepts: "諸行無常" and "一期一会". In my own words, they mean that everything is in a constant state of flux, and every single opportunity comes only once in a lifetime.
